INGREDIENTS:
1 delicata squash
4 T olive oil, divided
3 tsp maple syrup
1/2 tsp curry powder
1/2 tsp mixed herbs
1/2 tsp chili powder
1/2 cup pumpkin seeds
1 T balsamic vinegar
1 tsp mustard
lettuce: I used a slaw combined with arugula
1 can chickpea, drained & rinsed
1/2 apple, sliced
3 oz goat cheese
METHOD:
preheat oven to 400 degrees
trim ends off squash and half it, scoop out seeds. slice in half circles, about 1/3″ wide or so. place on large sheet pan, drizzle with 1T olive oil (making sure its spread around), roast for 10 min.
meanwhile combine 2tsp maple syrup, curry powder, rosemary, chili powder and a dash of salt together. After the 10min of roasting, drizzle this mixture on the squash, and roast for another 5-10 minutes. squash should be lightly browned and soft.
toast the pumpkin seeds until they are fragrant
in small bowl, mix the dressing ingredients together: 3T olive oil, vinegar, mustard & 1 tsp maple syrup; salt & pepper to taste.
in large bowl, combine the lettuces, chickpeas, sliced apple; add dressing and mix. Add the squash, pumpkin seeds and goat cheese.
