not gonna lie, these are ADDICTING! I love to watch football and wanted a traditional game watching type food with a vegetable slant… so here it is. get as creative as you want on the toppings.
INGREDIENTS:
1 can (drained & rinsed) chickpeas
1/2 cup of your favorite hot sauce
1/4 cup butter
1/2 tsp garlic powder
black pepper to taste
12 oz your fav tortilla chips (I used blue corn style)
1 1/2 – 2 cups shredded cheddar cheese (or any Mexican style cheese)
1 red pepper, diced
2 green onions, thinly sliced
METHOD:
In a small sauce pan over medium heat, combine the chickpeas, hot sauce, butter, garlic powder & black pepper. Stir frequently to combine as butter melts. Let boil to allow mixture to slightly thicken. Turn down heat and keep warm for 5 min or so. Remove mixture from heat and loosely mash the chickpeas.
Meanwhile preheat oven to 375F. Spread the tortilla chips evenly, on a parchment lined baking sheet. Sprinkle with the cheese, add the chickpeas, the red pepper and any other toppings you want to add (corn, black beans etc.)
Bake for 10 min or so, just enough time for cheese to melt. Top with green onions. Can serve with guacamole / sour cream.
